Impression: A great Texas whiskey. The nose is reminiscent of a classic Kentucky whiskey and the palatal experience is smooth and easy to drink. Even though it starts out on a sweet note it finishes well with a bit of black pepper and mint.
Hands free risotto: sautée 2 tbsp butter in Dutch oven with 1 whole minced whit onion and 3/4 tsp table salt for 4-7 min till softened and then add 1 whole minced garlic clove for 30 sec. Add two cups Arborio rice and toast for 3 min till edges are brown then add 1 cup white wine and cook until it is absorbed by the rice. Create a boiling mixture in a separate sauce pan of 5 cups chicken broth with 1 1/2 cups water. Add 5 cups of this broth to the Dutch oven and turn heat to medium low. Put lid on and let cook for 17 min. Stir twice in those 17 minutes. Then add 3/4 cup of the broth and stir constantly for 3 min. Then add 1 cup shredded Parmesan. Cover Dutch oven and set off heat for 5 min. Add 2 tbsp butter, 2 tbsp chives, 2 tbsp parsley, 1 tsp lemon juice and ground pepper....adapted from ATK season 11
Pan seared chicken breast- take 4 boneless chicken breasts and poke 4-5 areas on each side with a fork and season each side with 1/4 tsp table salt and put all 4 in baking dish covered with aluminum foil. Cook on middle rack 275 30-40 min until 145 internal temp. Create a slurry of: 1 tbsp AP flour, 1 tsp corn starch, 2 tbsp melted butter, 1/2 tsp black pepper. Brush on each side of chicken to improve browning. Sear on each side with pure olive oil in a skillet for 3-4 min per side then let rest. Internal temp should be 160. Create a pan sauce in skillet using one diced shallot sautée for 2 min then add 1 tsp flour and cook 30 min then add 1 cup chicken broth for 3 min until sauce is reduced to 3/4 cup. Mount with 1 tbsp butter and add 1 tbsp lemon choice, the resting chicken juices and chopped parsley ...adapted from season 11 ATK
