Chicken and Dumplings: season 2.5 lbs of chicken thighs with salt and pepper and sear both sides in Dutch oven. Remove chicken and all the grease and reserve 1 tbsp to sautée vegetables- 2 finely chopped white onions, 2 chopped celery stalks and 2 chopped carrots for 7 to 9 min. Deglaze with 1/4 cup dry sherry then add 6 cups chicken stock and 1 tsp chopped thyme. Re add chicken thighs and 1 lb of chicken wings. Put lid on and simmer for 55 min. Remove chicken and cut into 1 inch strips. Return chicken back to Dutch oven. Dumplings dough- 2 cups AP flour, 1 tsp sugar, 1 tsp salt, 1/2 tsp baking soda. Whisk together. Then take 3/4 cup buttermilk and combine with 4 tbsp melted butter and stir together then add 1 egg white and stir together.  Stir wet ingredients into dry ingredients until dough ball forms. Add 1/4 cup minced parsley to the Dutch oven and the use ice cream scooper to add 24 dumplings. Use kitchen towel to wrap Dutch oven lid and cover Dutch oven and boil for 16 min...adapted from season 11 ATK

Nose: Oak, Spice, Caramel, Toasted Nuts and Lemon
Taste: Honey on the front of the palate followed by mint and leather on the back and sides of the palate
Body: Thin
Finish: A very mild burn with the mint carrying on to the end of the finish
Personality: San Antonio, TX

Impression: A very smooth and easy to drink bourbon. The wheat component really turns up the sweetness on this bourbon. We like the nose better than the palatal experience. After the initial sweetness subsides there is a lack of complexity that is promised on the nose.
