Croissants: melt 3 tbsp butter in sauce pan and then add 1 3/4 cup whole milk. Transfer to stand mixing bowl and add 4 tsp rapid rise yeast, 2 tsp table salt, 1/4 cup sugar, 4 1/4 cup AP flour mix at low speed for 3 minutes with dough hook then high speed 1 minute. Let sit at room temperature covered with plastic wrap for 30 minutes. Press into 7x10 inch rectangle and put on baking sheet and cover with plastic wrap and let sit in fridge 2 hrs then freezer 30 minutes. Pound out 12 ounces of 83% fat European butter into an 8 inch square then fold parchment paper around it and put in fridge 30 minutes. Roll out dough into 17x8 inch rectangle and put 8 inch butter square in center. Fold one end over 1/3 and the other end 2/3 to enclose then butter. Roll out to 24x8 inch rectangle and fold again like a letter rotate 90 degrees and roll out to 24x 8 inch. Fold again and place in plastic covered baking sheet and put in  freezer 30 minutes. Repeat the roll out and folding with 30 minutes in freezer two more times then leave in fridge on plastic covered baking sheet 2 hrs then 30 minutes in freezer. Roll out to 16x18 inches and then fold in half on the long axis. Make nicks every 3 inches on one side then every 3 inches on other side offset by 1.5 inches. Use a pizza cutter to cut diagonals from opposing nicks and then unfold the triangle and separate in the center. Make a nick in the base of the triangle and roll into a croissant from the base. Let sit  2 hrs in baking sheet covered with plastic wrap at room temperature then without plastic wrap for two hours. Brush each with egg wash and bake at 400 degrees 25 minutes. Impression: Booker's is a bargain and we consider it one of the best bangs for the buck when is comes to  bourbon. The spice that is noticed on the nose does not disappoint on the palate. We always enjoy unfiltered bourbons, but with just a splash of limestone branch water we noticed that the subtle smoothness of the cola and nuts becomes even better and does not take anything away from the fantastic rye finish.
