Grilled bone in pork roast: 5 lb center cut bone in pork roast and salt it with 4 tsp kosher salt wrap in plastic wrap and refrigerate at least 8 hrs. Score the fat cap and season with pepper. Sear all sides in skillet and roast in oven at 425 until 140 internal temp and let rest 30 minutes. Orange/lime relish- supreme 5 oranges and cut into 1/4 inch pieces. Add 1/2 tsp orange zest, 1 minced jalapeƱo, 1/2 red minced onion, 2 tsp lime juice, 2 tsp chopped parsley , 1 tbsp EVOO, 2 tsp brown sugar, 1.5 tsp oregano, 1/2 tsp cumin, 1.5 tsp white vinegar , salt and pepper...adapted season 12 ATK

Nose: Oak, Toasted Nuts, Vanilla, and Spice
Taste: Sweetness of Molasses and Corn on the front of the Palate and Leather and Tobacco on the Hind Palate. There is also a hint of pepper as the finish begins. We noticed a hidden note of chocolate as water was added.
Body: Thick and Chewy
Finish: An excellent finish with a smoldering burn and a refreshing note of mint at the very end
Personality: Ulysses S. Grant
Impression: This is a excellent barrel proof bourbon. We find that with the addition of just a splash of limestone branch water the subtle sweetness really develops and balances well with the leather and tobacco notes.
