Minestrone- soak 1/2 pounds dry cannolini beans in a soln of 1.5 tbsp table salt and 2 quarts cold water and let sit for 8-24 hours. Rinse off with cold water. I'm a Dutch oven sautée 3 ounces diced pancetta in 1 tbsp olive oil for 4 min then add 1 diced carrot, 2 diced celery, 2 diced white onions, 1 diced Zucchini for 9 min until softened. Add 3 cloves minced garlic , 1/2 tsp table salt, 1/4 tsp red pepper flake and 1/2 chopped one half cabbage head for 2 min. Then put all the vegetables on a baking sheet. Put beans in the Dutch oven with 8 cups water and 2 cups chicken broth, 1 bay leaf and a Parmesan cheese rind. With lid off vigorous simmer for 45 min. Put vegetables back in at 45 min and add 1.5 cups V8 juice and cook for 15 min. Add 1/2 cup chopped basil and them ren even bay leaf and rind. Garnish with EVOO and grated Parmesan...adapted for. Taste: Smokey Oak, Toffee and Honey on the Front Palate and Leather on the Mid-palate.
Finish: Very mild burn with a very pleasant mint finish.

Impression: This is a fantastic bourbon for the price point. With a little bit of limestone branch water we noticed that the leather present in the palate subsides and the sweeter notes of toffee and honey become pervasive throughout. If you were given this bourbon in a blind tasting, you would think that this was a top shelf bourbon and be willing to pay hundreds of dollars. Although the back label recommends drinking this whiskey in a cocktail, we drink it straight and would slap the coke out of your hand and pistol whip you if you mixed it.
