Color: Tea Colored
Nose: Caramel, spice, and citrus
Taste: There is a very sweet honey suckle note on the front of the tongue followed by a leather astringency on the sides of the tongue and back of the palate.
Finish: Black pepper finish that lingers only slightly.

Impression: This is a very easy to drink offering from Elijah Craig. While it is missing the complex notes of some its brothers it does go down smooth. We suspect the 18 years aging may have taken some of the fight out of this bourbon.
Tiramisu: mix 2.5 cups coffee with 1.5 tbsp espresso powder and 5 tbsp dark rum. Take 14 oz lady fingers and dry them in the oven at 325 for 10 minutes . Dip each side in coffee mixture for 2 sec. line a 9 x13 inch Pyrex baking dish with the lady fingers. Egg mixture- in stand mixer combine 6 egg yolks for ten seconds at low speed then Add 2/3 cup granulated sugar and 1/4 tsp salt and mix at medium high for 1.5 minutes then then add 4 tbsp dark rum and mix at medium speed for 30 seconds and then add 1.5 pounds of mascaparone that is cold and mix at medium speed for 30 seconds and put in a mixing bowl. In stand mixer beat 3/4 cup heavy cream in stand mixer until medium peaks. Fold into the egg mixture in the mixing bowl. Cover the lady fingers with 1/2 of the egg mixture and then sprinkle 2 tbsp cocoa powder on top. Add another layer of lady fingers followed by the rest of the egg mixture and 1.5 tbsp of cocoa powder and bittersweet chocolate shavings and put in fridge for 6 hrs...adapted season 9 ATK
