Corn chowder-remove kernels from eight ears corn and then use vegetable scraper to take pulp off these ears. Put pulp in cheesecloth and squeeze out the corn milk for 2/3 cup total. Set aside for later. In a Dutch oven sautee 3 tbsp butter with 1 chopped white onion and 4 chopped slices bacon, 2 tsp thyme, 2 tsp table salt, 1 tsp black pepper for 8 min. Then add 1/4 cup AP flour to make a roux. Add 5 cups water then add the corn kernels and 3/4 pound chopped red potato and bring to a simmer with lid off for 15 min. Then take 2 cups of soup and purée in blender and add back to the soup. Add 1/2 cup half and half then add the 2/3 cup corn milk. Season with chiffonade of basil. Adapted from season 12 ATK

Taste: Corn at the front palate followed by Dark Chocolate, Leather, and Dried Fruit with just a hint of buttercream.
Finish: Very smooth deep burn that lingers in the pharanx.
Body: Thick and Chewy

Impression: One of our favorite bourbons. If we could, we would BATHE in this bourbon. Every time we come across the Cowboy Bourbon, we buy it. It is an extremely unique bourbon; and its packaging with a dark chocolate wooden box is gorgeous. Garrison Brothers have proven that their bourbon rivals anything from Kentucky when it comes to complexity and uniqueness. Be warned, this is a high proof bourbon. Neat, it is not for the faint of heart. Mix in some limestone branch water and the complexities of this bourbon reveal themselves like a good novel. Because it is unfiltered it can seem very thick, but this is a good thing. It is very hard to find, due to its limited release. We realize the price point is high, but good bourbon is not cheap and cheap bourbon is usually not good.




Fried chicken: brine a whole butchered chicken in 7 cups buttermilk mixed with 3 bay leaves, 1/4 cup sugar, 2 tbsp paprika, 3 cloves garlic, 1 cup kosher salt for 2 hrs in fridge . Air dry chicken wire baking sheet for two hrs in fridge. Coat chicken with AP flour than an egg wash of 1 egg, 1 cup buttermilk , 1 tsp baking powder, 1/2 tsp baking soda then a final coating of AP flour. Let sit for 5 min and then fry in peanut oil at 375...adapted from ATK

Buttermilk waffles- dry ingredients: 2 cups AP four, 1 tbsp sugar , 3/4 tsp table salt, 1/2 tsp baking soda, 1/2 cup powdered milk.   Wet ingredients: whisk 2 whole eggs, 1/4 tsp vanilla, 1/2 cup sour cream, 1/4 cup vegetable oil and 1 1/4 cup seltzer water. Add wet to dry and mix until just a few lumps. Add to waffle iron....adapted for

Bechamel sauce: melt 1 tbsp butter in sauce pan on medium heat then add 2 tbsp AP flour to make a roux. Cool for 1 min and then slowly add 2 cups whole milk and incorporate into roux as it is added. Take a 1/2 whit onion and stud it with 3 cloves and 2 bay leaves and let simmer in the sauce for 30 min. Finish with salt pepper and grated nutmeg ...this is my recipe but the Salmon was adapted from season 10 ATK

Taste: On the front of the pallet there is a sweet coffee and chocolate followed by just the right amount of leather astringency on the side of the pallet that fades nicely into the finish.
Body: Thick and chewy
Finish: A bomb of a finish with a long lingering burn that last for an eternity.

Notes: There’s a wonderful sweet corn on the nose of this whiskey that is extremely pleasant. It’s the type of whiskey that you could nose all day long. We compared this Cowboy to their offering from three years ago offering this is a next level whiskey. Far more complex. We would take this over George T Stagg any day.
