Taste: Syrup sweetness followed by a hint of leather and Port wine
Finish: Only a slight rye burn

Impression: A very sweet offering from High West. We expected that this was going to have more of a powerful rye finish than it did. An interesting experiment from High West.
Grilled stuffed pork tenderloin: butterfly open two pork tenderloins and pound them out until 1/4 inch thick and even off at 10 x 6 inches . Stuffing- in food processor add 1/2 cup kalamatta olives, 1/2 cup sun dried tomato, 4 filets anchovies, 2 cloves garlic, 1 tsp lemon zest, 1 tsp thyme . Pulse 4 x then add bLack pepper and pulse again. Season inside of pork with salt pepper then add stuffing and then add 1/2 cup baby spinach on top of the stuffing in each tenderloin. Roll up and tie with 5 ties season outside and sear in skillet. Then roast at 425 until 140 internal temp. Let rest 20 minutes then carve...adapted season 12 ATK
