Chicken Waldorf salad: sous vide 4 boneless chicken breasts for temp 160. Let cool on fridge for an hour and cut into 1/4 inch pieces. Mince 2 ribs celery, 1 whole shallot minced and combine with a mayo dressing of 1/2 cup mayo, 2 tbsp lemon juice,1 tsp Dijon, 1/4 tsp black pepper , 1/2 tsp ground fennel , 1 tsp fresh thyme and 1/2 cup roasted and chopped walnuts with one Granny Smith apple diced.
