Broccoli cheese soup: take 2 lbs broccoli florets and cut into 1/4 inch pieces. Saunter in Dutch oven with butter and 2 minced garlic cloves, 1 white chopped onion, 1 tbsp dry mustard, 1/8 tsp cayenne, 1 tsp table salt and cook 6 min medium high. Then add 1 cup water and 1/4 tsp baking powder and bring to a simmer with cover on for 20 min then add 2 more cups water and 2 cups chicken stock and 2 cups baby spinach. Cook for 1 min. Purée soup in blender and add 3 ounces sharp cheddar and 1.5 ounces Parmesan. Combine back in Dutch oven. Season with black pepper and garnish with shaved parmeasan. Adapted from season 12 ATK

Experiment NO.3 - New 60 gallon American Oak barrel with a low, deep impact toast profile

Color: Copper
Nose: Spice, Cola, Almonds
Taste: Bubble gum, toasted nuts, and a slight hint of leather on the sides of the tongue
Body: Very light
Finish: Light and Minty
Impression: Very sweet on the front of the palate and not much of a finish.



Experiment NO.4 - New standard whiskey barrel with medium char infused with heavily charred American Oak cubes
92 Proof
Color: Deep Copper
Nose: Oak, Cola, and Spice
Taste: Honey sweetness and peanuts followed by mint
Body: Light
Finish: A little more defined finish with a little black pepper
Impression: A little more rounded with a much better finish.



Experiment NO.6 - New standard whiskey barrel with a light-medium char infused with lightly toasted American Oak staves

Color: Auburn
Nose: Oak, Toasted Nuts, Cola, and Dark Fruit
Taste: Caramel and Peanuts on the front of the palate followed by leather astringency on the sides of the tongue
Body: Medium
Finish: A nice medium burn followed by lingering mint.
Impression: NO.6 is a much better experiment than its two predecessors offering a classic bourbon profile and a very enjoyable finish.
