Peach Pie

Vodka pie crust: in food processor combine 1.5 cups WIO, 2 tbsp splenda, 1 tsp table salt pulse twice. Then add 12 tbsp cold unsalted butter cut into 1/4 inch slices and 1/2 cup vegetable shortening and process for 15 seconds then add 1 cup WIO and pulse 5x. Then in a mixing bowl combine with a 1/4 cup vodka and 1/4 cup water and form into a dough ball and put in fridge for 45 minutes. Divide dough in half and roll out a bottom and top crust..,,adapted from ATK.

Slice 3 lbs peaches into thirds and add to mixing bowl with 1 tsp lemon zest, 1 tbsp lemon juice, 1/2 cup sugar, 1/8 tsp table salt combine and let sit at room temp for an hour. Take out 1 cup of the peach mixture after and hour and in a colander with an underneath bowl macerate into a paste and take 1/2 a cup of peach liquid and combine in a skillet with 2 tbsp no sugar needed pectin, 1/4 tsp cinnamon, pinch nutmeg 2 tbsp sugar and cook 3-5 minutes medium heat until thickens. Take the macerated peaches and combine with 1 tbsp of corn starch. Combine the pectin mixture with the macerated peaches then drain the liquid in the 3 lb peach mixing bowl and combine all together. Line a 9 inch pie plate with the pie crust and fill with the peaches then create a lattice top crust. Brush the crust with egg wash. Bake on pizza stone lowest rack 425 25 minutes then 375 for 30 minutes. Let cool on wire rack 3 hrs...adapted from ATK season 2

Nose: Oak, Caramel, Anise, and Spice
Taste: Toffee on the anterior aspect of the palate followed by a doughy bread flavor and baking spice on the mid palate and a well balanced leather astringency on the posterior palate and sides of the tongue.
Finish: There is a spicy pepper finish that marginally lingers and is followed by a very pleasant mint note at the end.
Body: Thick

Impression: Another great offering from Knob Creek. We cannot over emphasize what a great deal Knob Creek offers. Adding just a splash of limestone branch water allows the flavors to marry to a wonderful crescendo of classic bourbon flavors. This offering represents another swan song from Booker Noe released by his son Fred Noe in honor of his father. Some of the last bourbon offerings from a legendary distiller. This is by far the sweetest of the three.
