Nose: Oak, Caramel, Toasted Nuts and Spice
Taste: Nice light honey sweetness on the front of the tongue followed by dark fruit on the mid palate that leads to a leather astringency on the posterior palate and sides of the tongue.
Finish: Mild black pepper finish followed by a mint note at the end.

Impression: Another great offering from Knob Creek. We cannot over emphasize what a great deal Knob Creek offers. We realize that the price point his high on these limited editions, but it is money well spent.
Cauliflower Gnocchi: steam 2 heads of cauliflower until fork tender then press them through a ricer. Let dry on paper towel lined baking sheet for 30 min. Weigh out 1 pound of cauliflower then add 7 ounces AP flour(WIO) and 1 tsp table salt. Use a fork to bring together then use hands to roll into a dough ball. Knead on cutting board for 2 min. Divide into 8 pieces and roll into 1/2 inch diameter ropes. Cut into 3/4 inch pieces and use back end of a fork to shape into a gnocchi dumpling. Sauce- in skillet melt 4 tbsp butter into brown butter and take off heat and add 1 diced shallot and 1 tbsp chopped sage and cook off heat 1 min then add lemon juice and salt and pepper . Boil gnocchi in 4 quarts water and 1 tbsp table salt for 90 seconds until they float and then continue for 30 more seconds. Toss in sauce and serve.
