Cheese Burgers- take 10 ounces of sirloin tips and 6 ounces of short ribs and cut into 1 inch cubes and put in freezer for 20 min. Grind in food processor for 12 one Sec pulses. Gently mold beef into 4 loosely formed patties 1/4 inch high. Toast buns in butter so can withstand the juiciness. Season meat with salt pepper and on high heat in a skillet cook one side for 3 min. Flip and put American cheese on and cook for one minute. No pink will remain but due to the high fat content well done tastes medium rare. Add a sauce to top bun that is: 2 tbsp mayo, 1 tbsp ketchup, 1/2 tsp sweet relish , 1/2 tsp vinegar, 1/4 tsp black pepper. French Fries- cut 1/4 inch wide and deep Yukon gold potatoes into a julienne. Combine cold with 6 cups peanut oil and bring to a vigorous boil. Let sit at boil for 15 min undisturbed the. Stir and scrape sides of Dutch oven. Cool for ten more minutes then season with salt and pepper. Adapted fro ATK

Impression: This is a very unique rye that distinguishes itself in field of ordinary rye whiskies. We especially like the complexity on the palate that you normally don't find in a straight rye whiskey. At first you may be fooled into thinking that your are sipping on a bourbon with a hight rye mash bill, but your not. The nose is very spicy and you anticipate a strong lingering burn, but the finish is quite pleasing and slightly mellow. The 13 year aging process really mellows this rye.
