Italian Braised Chicken Thighs and Creamy Polenta with a Braising Liquid Reduction Sauce
Italian braised chicken: cut 4 ounces of prosciutto into cubes and sautée In olive oil for 3 min. Add 4 slices of thinly sliced garlic for a minute. Remove from skillet then sear 8 chicken thighs on both sides 4 min per side. Season them only with pepper then set aside on a plate. Add 2 tbsp olive oil to skillet and 2 tsp of flour and cook for a minute to create a roux. Deglaze skillet with 2 cups white wine and 1 cup chicken broth and bring to a simmer and reduce for 5 min. Add a Rosemary twig, 12 sage leaves, 1/2 tsp red pepper flakes, 4 whole cloves, 2 bay leaves, the prosciutto and garlic and put chicken in skin side up and put in oven 325 for 1 hr 15 min. Then remove chicken and reduce braising liquid. Add chopped rosemary, 1 tbsp of lemon juice and mount with 2 tbsp butter . Garnish with chopped parsley...adapted from ATK season 11
Polenta- have 7 1/2 cups water at a boil then add 1 1/2 tsp table salt and pinch of baking soda. Then add 1 1/2 cup corn meals for stir for 1 min. Put lid on and have it at a sub simmer for 5 min. Stir for 10 sec then put lid back on and let sub simmer 25 min. Then turn off heat and add 2 cups grated Parmesan and 2 tbsp butter and black pepper. Put cover on and let stand for 5 min...adapted from ATK season 11

Taste: Toffee on the front of the palate, Peanuts throughout, and Leather on the hind palate. Once water is added you will notice a toasted marshmallow component.
Body: Light
Finish: Nice rye burn on the finish that sticks around for a little while.

Impression: We think that Noah's Mill is a very complex bourbon with lots of character especially considering the price point. We really like the finish on this bourbon and find that just a splash of limestone branch water really opens up the palate on this bourbon. You might be tempted to use this whiskey in a mixer and you would not be wrong, but we would also like to point out that it is perfectly acceptable to enjoy this bourbon neat or on the rocks. However you take it, you can't go wrong with Noah's Mill.
