Chicken Marbella: create a paste in food processor using 1/3 cup pitted green olives, 1/3 cup dried prunes, 2 tbsp capers, 3 anchovies, 1/2 tsp dried oregano, 1/4 tsp kosher salt, 1/4 tsp black pepper, 4 cloves garlic, 3 tbsp EVOO pinch red pepper flakes. Process for 2 minutes. Sear 2-3 lbs bone in chicken breasts skin side down for 8 minutes. Remove from skillet and cook 1/3 cup of the paste in 1 tbsp of the rendered fat for 2 minutes at medium heat. Then deglaze with 1/3 cup white wine, 3/4cup chicken stock. Add the chicken back skin side up with 1/3 cup halved green olives, 2 bay leaves, 1 tbsp capers and put in 400 degree oven for 15 minutes. Then add paste to top of chicken and back in 400 degree oven for 12 minutes with 1/3 cup of dried prunes. Then remove chicken and bay leaves and add 1 tbsp butter, 1 tsp red wine vinegar and 1 tbsp minced parsley...adapted season 13 ATK

Nose: Oak, Baking Spices, Toasted Marshmallows, and Almonds
Taste: There is a sweet honey suckle note on the front of the tongue followed by leather on the sides and just a hint of mint
Body: Thick
Finish: There is a really nice black pepper finish that really lingers.
Personality: Agent Kalus

Impression:  A solid old school style bourbon with a nice black pepper finish. While there may only be a few palatal notes, we still like this offering from Old Forester as a daily drinker.
