Nose: Oak, vanilla, anise, cloves and baking spice
Taste: There is an immediate note of marzipan and oak on the front of the palate followed by a very mild leather astrigency on the mid palate.
Body: Thick
Finish: There is a fantatic cinnamon burn that lingers for what seems to be an eternity.

Impression: Our favorite pappy. The finish is like an Atomic Fireball candy. You can get completely lost in the nose. Like all of the Pappy Van Winkles we realize to everyone has the opportunity to enjoy these fantastic bourbons but if given the chance....go for it.
Strawberry cream Cake: grease and flour a 9 inch cake pan. Dry ingredients- 1 1/4 cup cake flour, 1 cup granulated sugar, 1.5 tsp baking powder, 1/4 tsp salt whisk together. Wet ingredients- 2 whole eggs, 3 egg yolks, 6 tbsp melted butter, 2 tbsp water, 2 tsp vanilla and whisk together. Add dry into wet and combine. In stand mixer beat 3 egg whites 1.5 minutes until frothy then add 3 tbsp sugar and beat until soft peaks. Fold into batter and then bake 30-40 minutes lower rack at 325 and then let cool 10 minutes in the pan on wire rack and then turn out of pan and cool for 2 hrs. Take 2 lbs of strawberries and cut 24 into halves with tops removed and set aside. Quarter the remaining strawberries Nd macerate in fridge one hour with 6 tbsp sugar. Drain the liquid and reduce to 3 tbsp and then put strawberries in food processor and pulse 5x then re add reduced syrup. Whipped cream filling- in stand mixer, add 8 ounce cream cheese, 1/2 cup granulated sugar, 1/8 tsp salt. Whip medium high for 3 minutes and then add 2 cups heavy cream and beat to stiff peaks. Cut cake into 3 layers and arrange half cut strawberries on border and add 1/2 the strawberry jam mixture in the center. Then 1/3 of whipped cream. Repeat with a second layer and then on top put rest of whipped cream and arrange a strawberry garnish....adapted season 7 ATK
