Chicken Noodle Soup

Sautée 1lb of ground chicken in Dutch oven with 3 ribs chopped celery, 3 chopped and peeled carrots and one whole diced white onion for 5 min. Do not brown the chicken. Add 2 quarts of low sodium Swansons organic chicken broth and 1 quart water , 3 bay leafs and 2 tsp table salt . Poach 2 bone in chicken breasts and two thighs/with drumsticks with skin removed for 30 min at a simmer with lid on Dutch oven. Remove the poached chicken and allow to cool. Let stock summer for 20 min with lid off and then use fine mesh strainer to remove all solids. Let sit for 5 min and then skim the fat. Create a corn starch slurry using 3 tbsp corn starch and 1/4 cup water and add to the strained stock and bring to a boil to activate the corn starch. Reduce to a simmer and poach 3 chopped celery ribs, 3 chopped carrots and 1 whole white onion sliced for 20 min. Then add 1 cup egg noodles and cool for 5 min. Shred the chicken and add to stick with roughly torn Swiss chard. Garnish with chopped parsley
