Straight High Rye Bourbon Whiskey

60% Corn, 36% Rye, 4% Malted Barley
Color: Burnt Umber
Nose: Mild Oak, Roasted Nuts, Vanilla, and Allspice
Taste: Maple Syrup, Roasted Peanuts, and New Leather
Finish: Nice smoldering burn that lingers in the back of the palate with a doughy feel.

Body: Thick
Personality:

Impression: This is a very good bourbon with a high rye content. The initial impression is that it is very sweet, but once you dive deeper you notice some of the more subtle elements on the palate that make this a great bourbon.

Steak Frites: Frites- julienne 2.5 pounds of ruset potatoes. Rinse in a colander and let sit in cold water mixing bowl for 30 min in fridge. Drain off water and pay dry and toss with 2 tbsp corn starch. Let fries dry on wire rack for 30 min. Heat 3 quarts peanut oil to 325 in Dutch oven and cook 1/2 the batch for 4 minutes and repeat with other batch. Let sit on paper lined towels for 30 min then fry at 375 for 3 min in 2 batches and transfer to paper lined baking sheet and season with salt and pepper.  Compound butter- 4 tbsp butter, 1/2 diced shallot, 1 tbsp minced parsley, 1 minced garlic clove, 1 tbsp minced chives, salt and pepper..in 275 oven heat ribeye to 95 degrees. Then season with salt and pepper and sear both sides in skillet to an internal temp of 125. Place compound butter on top and serve with frites...adapted from ATK season 11
