Chocolate Creme Pie: pie crust- pulse 16 whole Oreos in food processor for 15 pulses then add two tbsp melted butter. Pulse 10 more times then press into 9 inch glass pie plate up to the lip. Bake 15 minutes middle rack at 350. Let cool on wire rack then chill in fridge. Filling- on medium heat simmer 2.5 cups half and half with 1/4 cup sugar and a pinch of salt. In mixing bowl add 6 egg yolks with chalaza removed then whisk in 1/4 cup sugar and 2 tbsp corn starch. Temper the egg mixture with half cup of the half and half and whisk together Then whisk it into the half and half on medium heat on the stove top and whisk until thickens then remove from  heat and whisk in 6 tbsp butter, 6 ounce bittersweet chocolate and 1 ounces unsweetened chocolate and 1 tsp vanilla. Pour filling into pie crust and refrigerate. Add whipped cream topping and chocolate shavings and serve. Adapted from chapter 2 ATK

Taste: Leather on the entire palate followed by a honey suckle sweetness and liquorish
Finish: Low simmering rye burn that lingers for a long time

Impression: This rye has bee de-clawed. The nose is very mild and sweet, but it does not transition well to the palate. 18 years for a rye seems a bit long. Our preference for rye is a strong and bold palatal experience and might even make you sneeze when you nose the glass. We would like to have experienced this rye at 9 years.
