Nose: Heavy Spice, Cola, Vanilla
Taste: An initial honey on the tip of the tongue followed immediately by leather that coats the mid-palate
Finish: Nice smoldering rye burn with a subtle mint note in the back ground

Impression:  A nice Texas Bourbon with a leathery gustatory experience. The initial sweetness is balanced well with the nose and mid-palate leather.

Cranberry Pecan Muffins: dry ingredients- 1 1/3 cup AP flour, 3/4 tsp table salt, 1 1/2 tsp baking powder whisk together. Wet ingredients- in food processor combine 1 1/4 cup toasted pecans and 1 cup granulated sugar and process for 15 seconds until looks like wet sand. Transfer to a mixing bowl and add 2 whole large eggs and 6 tbsp cooled melted butter and a 1/2 cup whole milk and whisk together. Add wet to the dry ingredients and let sit 30 mins. Take 2 cups frozen cranberries and microwave for 30 seconds. Chop in food processor with 1 tbsp confectioner sugar and 1/4 tsp table salt for 5 pulses. Add to batter and fold in gently. Topping- 3 tbsp AP flour, 1 tbsp brown sugar, 1 tbsp granulated sugar, 2 tbsp softened butter and process for 8 pulses then add 1/2 cup toasted pecans and pulse 4 times. Add 2 tbsp batter to muffin baking tin and top each with the nut streusel. Bake at 425 18 min on middle rack and rotate half way. Let cool in muffin pan for 10 minutes then remove from Pan and let cool on wire rack ten minutes. Adapted from ATK season 12
