French Onion Tart: For the dough in a food processor add 1 1/4 cup AP flour, 1 tbsp sugar, 1/2 tsp salt and pulse 5x. Then add 8 tbsp of chilled cubed unsalted butter and pulse 25x until thoroughly mixed. Add 2 tbsp of cold water and process for 10 sec. If dough not pulling away from sides add 1 more tbsp water. Spray a tart pan with vegetable oil. Press in the dough in walnut size pieces. Place in freezer for 30 min. Preheat oven to 375 and on middle rack add the tart pan with aluminum foil covering the top held down by pie weights. Cook for 30 min and then remove the aluminum foil and cool ten more minutes until crust is brown. Render the fat on 4 strips of diced bacon and set aside on paper towel . Take 1.5 lbs of white onion and slice side to side and add two skillet with 2 tbsp of bacon grease and a sprig of thyme and cover and cook on medium for 10 minutes. Stir and cook on low
for another 20 min. Create custard using 2 whole eggs whisked with 1/2 cup half and half and season with salt and pepper. Add the onions and pour into pie crust. Put bacon on top. Cook at 375 middle rack 25 min. Want center firm when press on it. Let cool ten minutes and take out of tart pan
