Shumai: create a dipping sauce- mix 1 tbsp soy sauce, 1/2 tsp kosher salt, 1 tsp sugar and add to 1/2 cup peanut oil at 300 degrees then turn off heat and add 1/4 cup chili flakes and 2 crushed cloves of garlic and let cool an hour....cut 1 pound of country style pork spare ribs into 1 inch cubes. 10 one second pulses in food processor for half the meat then the other half of the pork and 1/2 pound of shrimp with 5 one second pulses. Combine the meat the. Add 1/4 cup chopped Chestnuts, 4 chopped shiitake mushrooms, 2 tbsp corn starch, 2 tbsp minced cilantro , 1 tbsp rice wine vinegar, 1 tbsp Chinese rice wine, 1 tbsp sesame oil, 2 tsp fresh grated ginger, 2 tsp sugar, 1/2 tsp table salt, 1/2 tsp black pepper then add a mixture of 2 tbsp soy sauce and 1/2 tsp gelatin. Use a 3 inch biscuit cutter to make circle cutouts of egg roll wrappers. Put 1 tbsp of meat mixture in each circle and fold up. Add pinch of grated carrot to top and steam for 10 min in steamer basket...adapted from season 11 ATK

Taste: Honey sweetness on the front palate that is followed by a light smokey peat flavor on the mid palate and leather on the edges of the tongue
Finish: There is a smooth finish with only the hint of spice
Body: Medium

Personality: Sir Sean Connery

Impression: This is a great Japanese. We found it very sweet forward and the peat was not overwhelming.  Overall a very well balanced whiskey.
