Thai Grilled Beef Salad: season 2 lb flank steak with white pepper and salt and sear in skillet both sides until internal temp 125. Let rest and tent with foil for 10 minutes then cut on bias against the grain. Create a marinade with toasted 1/4 tsp cayenne pepper, toasted 1/4 tsp sweet paprika, 1/2 tbsp toasted long grain white rice, 1 tbsp fish sauce, 3 tbsp lime juice, 1/2 tsp sugar, 2 tbsp water. Add beef to marinade. Add 4 slices shallots, 1 sliced Thai chile, 1/2 cup cilantro leaves, 1/2 cup mint leaves. Toss and then garnish with sliced cucumbers and 1/2 tsp rice powder...adapted ATK season 12

Nose: Oak, Caramel, Dark Dried Fruits and Nuts
Taste: Honey, cherries, and cream of wheat on the front of the palate followed by almonds and a mild leather astringency on the sides of the tongue.
Body: Thin
Finish: A very smooth mint finish with a very delayed black pepper burn that is subtle.
