Impression: We like the butter popcorn flavor. There is an initial vegetal aroma that disappears as the whiskey unfolds with dried fruit and spice. This whiskey does not conform to the classic American whiskey and sets a new standard for American Northwest whiskey..

Sherrywood soufflé- create a batter on the double boiler by adding 2 tbsp of brown butter to 3/4 cup of 2% milk . Add 1 tsp vanilla, 3 tbsp sherrywood bourbon, 3 tbsp raisins, 2 tbsp sugar, 4 egg yolks tempered with 3 tbsp warm water and 3 tbsp AP flour with 1 tsp table salt . Once it simmers allow to cool to room temp. Use 9 egg whites beaten to medium peaks with 1/2 cup sugar. Fold into the batter and place in greased ramekins. Bake at 375 on the low rack until risen
