Grilled Italian Stuffed Flank Steak: create an herb paste of 1 tsp minced parsley, 1 small diced shallot, 2 minced garlic cloves, 2 Tbsp of EVOO let marinate for 30 min. Butterfly a flank steak then pound out till 1/2 inch thick. Cover inside in herb paste. Lay thin slices prosciutto all along inside them a layer of Romano cheese. Roll up tightly and place ties on. Season the outside with salt pepper then sear in skillet. Roast at 275 in oven until internal temp 125 and then let rest for 10 minutes prior to slicing. Finish: Sharp and Very Abrupt like an Icepick. The lingering burn that you come to expect from a archetypal rye has been nullified. Adding water takes away the finish completely and does not uncover any new attributes
