Taste: Sweet Coconut, Almonds and Mint with only a hint of Leather on the sides of the tongue

Impression: We like the 15 year Whistle Pig. It is extremely sweet for straight rye whiskey. We miss the signature burn that you come to expect from a rye whiskey. We recommend this rye to all of our friends that are neophytes to the rye experience.



Stuffed Chicken Breasts- take 4 bone in skin on chicken breasts and make a pocket from the medial aspect 1/8 inch from the top and keep 1/2 inch thick walls on three sides. Brine in 1 quart of water and 3 tbsp table salt for 30 min. Pat chicken dry and season with pepper. Coat insides of pocket with a compound butter made from 4 tbsp butter, 1 minced shallot and 4 tsp tarragon . Insert a 1/2 inch wide 3 inch long piece of fontina cheese wrapped in prosciutto and tie chicken closed with 3 string ties. Sear all sides in a skillet and the. Roast at 350 for about 30 min until temp is 160. Let chicken rest ten minutes and create a pan sauce using shallots, white wine, 1 tsp flour and chicken broth . Mount with butter and add 2 tsp lemon juice. Slice and dress and garnish with chopped parsley ...adapted from season 11 ATK


Strawberry pie: use a vodka pie crust for a 9 inch pie pan and bake at 425 with pie weights for 15 minutes then 8 minutes without weights and let cool to room temp. Core 6 ounces strawberries and put in food processor and purée . Add to a sauce pan with 3/4 cup sugar, 2 tbsp corn starch, 1.5 tsp low sugar pectin, a pinch salt and whisk together.  Bring to a boil and let boil 2 minutes. Transfer to a mixing bowl and add 1 tbsp lemon juice let cool to room temp then add 2 lbs of hulled strawberries and mix. Place in pie crust and refrigerate for 2 hrs...adapted season 12 ATK
