Yellow layer cake with chocolate frosting: prepare two 9 inch cake pans with vegetable oil and cake flour and line with parchment paper.  Dry ingredients- 10 ounces cake flour, 1.5 cups granulated sugar, 1 1/4 tsp baking powder, 1/4 tsp baking soda, 3/4 tsp salt and whisk together. Wet ingredients- 6 egg yolks, 10 tbsp melted butter, 3 tbsp vegetable oil. 1 tsp vanilla then add 1 cup buttermilk. In stand mixer beat 3 egg whites until frothy then add 1/4 cup granulated sugar and whip to medium soft peaks. Set egg whites aside and in same stand mixer add dry ingredients and on low speed drizzle in wet ingredients then mix at medium low and fold in egg whites and divide into the 2 9'inch cake pans. Bake middle rack 350 degrees for 20-25 minutes and rotate 1/2 way through. Let cool on wire rack 10 minutes then remove from cake pans and let cool for 1.5 hrs. Chocolate frosting- in food processor add 20 tbsp butter and 1 cup confectioners sugar and 3/4 cup cocoa powder and pinch of salt. Process 30 seconds then add1 tsp vanilla and 3/4 cup corn syrup process 10 seconds then add 8 ounces melted milk chocolate and process 10 seconds. Put 1/3 of frosting in middle layer and 1/3 on top and frost with the rest on the sides. Adapted season 9 ATK

Notes: Very sweet yet complex on the palatal side. The nose is fantastic. We were a bit disappointed in the lack of the classic rye finish but we attributed the taming of this rye to the age statement. Overall, the best offering from Whistle Pig.
