Color: Pale Straw
Nose: Spice, Oak, Vanilla, Almonds, and Lemon
Taste:  Honey on the front of the tongue and astringent leather on the sides of the tongue. Peanuts dominate the mid-palate.
Body: Light
Finish: A very nice black pepper finish that really lingers on the sides of the tongue.

Impression: A very unique whiskey where the olfactory enticement and the palatal experience seem almost as different as night and day until you dive deep into both and begin to realize that they are different faces of the same coin. The peanut flavor is wonderful and really pairs well with pork.

Roasted Pork Loin- melt 1 tbsp butter medium heat and add 3 cloves sliced garlic and cook till golden brown then put in refrigerator and chill. Butterfly a pork roast into 1/3s. Season both sides with salt and pepper and brush the butter and garlic on inside then roll into a roast and tie off. In Dutch oven, brown the tops and sides and remove from Dutch oven the sautée one chopped green apple and white onion for 6 min. Add 1/3 cup dry white wine, 2 sprigs thyme, and one bay leaf. Put pork loin back in Dutch oven and cover with aluminum foil under lid and cook 60-90 min low rack at 225 until 140 internal temp. Remove the pork and add bloomed one tbsp gelatin in 1/4 cup chicken broth and remove bay leaf and thyme . Let pork rest 30 min. Bring sauce to a simmer and add chopped fresh parsley.
